A BORDERS couple have set up a business selling takeaway coffee from a trailer.
Amanda and Stuart Clink, of Peebles, launched Underdog this week and the pair are excited to operate from various locations around town.
“We had a trial run on Saturday which went fairly well,” said Amanda.
The couple, who previously ran the restaurant at Kailzie Gardens, told this newspaper that the decision to create their horsebox café was spurred on by lockdown.

Amanda said: “I suppose lockdown gave us the incentive to go for things, rather than waiting.
“We have to bash on and see how it goes.”
Stuart, 42, and Amanda, 41, made the decision to have a mobile venue as opposed to a building.
With this, they hope to be able to meet as many new people as possible, whether they are based at local beauty spots or nearer residential areas.
Stuart said: “We want to give to the local community.
“We can be at locations around the community and near to residences. We hope people appreciate that.”

When asked what it is like working in a small space compared with a standard restaurant kitchen, Stuart explained that it’s not a strange concept to him.
“I’ve worked all over the world,” he said. “I’ve even been in a tin shack on the beach in Fiji.
“So this isn’t that hard.
“The hardest part is keeping the trailer warm.”

Underdog is offering a wide menu, featuring a mix of locally sourced produce and homemade goods.
“We’re using local producers and seasonal produce, so the menu will change regularly,” said Stuart.
And the couple hope their determination in this new venture can also be used as a valuable lesson for their two young sons.

“It’s important to enjoy what you’re doing,” said Stuart.
“We want to teach the kids that ‘a nine-to-five [job]’ isn’t the be all and end all.
“And to make the most of what’s around us.”
Underdog will be open 11am to 4pm, Tuesdays to Saturdays.
Locations include the Kingsmeadows carpark, Glen Road, and Tweed Green.
